Chocolate Cherry Chia Pudding

Ingredients: – 2 tablespoons chia seed – 1 cup unsweetened almond milk (or milk of choice) – 2 tablespoons unsweetened cocoa powder

– 2 tablespoons maple syrup or sweetener of choice – 1/2 teaspoon vanilla extract – 1/2 cup fresh or frozen cherries, pitted and chopped – Dark chocolate shavings (optional, for topping)

Instructions 

Mix Chia Pudding Base: In a bowl or jar, combine chia seeds, almond milk, cocoa powder, maple syrup, and vanilla extract. Whisk or stir well to combine, ensuring there are no lumps of cocoa powder. 

Let It Thicken: Cover and refrigerate for at least 2-3 hours, or overnight, until the chia seeds have absorbed the liquid and the mixture has thickened into a pudding-like consistency. – 

Add Cherries: Once thickened, stir in the chopped cherries. – 

Serve and Garnish: Spoon the chia pudding into serving bowls or jars. Top with extra cherries and dark chocolate shavings, if desired. –
